This version of the seven-layer salad is cool and creamy and crunchy and chewy. Sometimes I make my molded salads with vegetables, but I decided to make this one chock-full of sweet, yummy fruit. And what a wise decision it was.

Ingredients

2 packages (0.3 ounces each) regular or sugar-free lemon gelatin
2 cups boiling water, plus 1 ½ cups cold
1 tablespoon fresh lemon juice
2 tablespoons raisins
1 banana, peeled and sliced
2 tablespoons chopped dried apricots
1 can (8 ounces) crushed pineapple, drained well
1 cup cottage cheese

Directions:
In a medium heatproof bowl, mix the gelatin with the boiling water until completely dissolved. Stir in the cold water and lemon juice. Refrigerate, covered, until the gelatin is just wiggly but not firmed up (like loose jelly), about 1 hour.

Spoon ½ cup of the gelatin into a 6-cup mold. Arrange the orange segments over the top and cover with another ½ cup gelatin. Scatter the walnuts and raisins on top and cover with another ½ cup gelatin. Next, layer the banana and apricots on top of the gelatin.

In a small bowl, fold 1 cup of the gelatin into the crushed pineapple and spoon evenly over the banana layer. Fold the cottage cheese into the remaining 1 cup gelatin and spoon over the pineapple layer. Refrigerate until firm, about 4 hours or overnight. Unmold and serve.

Christina Aguilera’s Exceptional Weight Loss

We all know Christina Aguilera has been going through some changes. And why not, everyone’s body changes throughout their lives, the only difference is that we (us non-celebrities) do not have media searching us down wanting to know our story. Why did you gain weight? How much? When are you planning to lose it?

Per an interview with Style Craze Magazine, here is an example of her daily menu (YUM!):
  • Breakfast: Bacon, blueberries, and avocado.
  • Lunch: Chicken salad with tofu, spinach, kale, squash, pickles, bell peppers, green beans, carrots, and beans.
  • Dinner: Chicken/fish/ chickpeas with rice, cucumbers, tomatoes, onions, cauliflower, eggplant, and carrots.
  • Snacks: Celery with nut butter and a shrimp cocktail.

Seriously that alone would give almost anyone a nervous breakdown or a good reason to dye your hair and escape to a deserted island for a year or more. But if we can find inspiration in others, why not make it a celebrity?

Per AOL.com's article "How Christina Aguilera Stayed Fit and Fabulous in 2014":
"Christina Aguilera is "as happy as can be, as fit as can be and as full of life as can be. She looks amazing," The Voice producer Mark Burnett told Life & Style magazine at a Sept. 20 event. The magazine is giving a glimpse into Christina's diet - and you'll be shocked at what she is and isn't eating and drinking!"

Life & Style is breaking down Christina's balanced diet. In addition to limiting alcohol, Christina now avoids unhealthy favorites like Nate 'n Al's restaurant, a place with everything from chocolate chip pancakes to corned beef.

For breakfast, Christina starts with blueberries, half an avocado, and turkey bacon, an ideal combo of healthy fats and protein.

For a snack, she relies on celery with almond butter. For lunch she goes lean, eating chicken breast over a veggie-filled salad. No creamy dressings!

Christina also loves shrimp cocktails as a healthy snack. For dinner, she loves chicken or fish curry and splurges with a glass of wine!

"Christina is refreshed and rejuvenated this season. She's really looking after herself and seems genuinely happy inside - and it shows, " a Voice insider told Life & Style." - Excerpt AOL.com -

POP Sugar's article on Christina states that:

"It's All About Confidence
Her biggest healthy secret: body confidence, no matter what her size. "I've been through my highs; I've been through my lows; I've been through the gamut of all things in this business," she's said in Marie Claire. "Being too thin. Being bigger. I've been criticized for being on both sides of the scale. It's the noise I block out automatically. I love my body." At her post-baby red carpet debut in early November, Christina wowed with a body-hugging red dress that showed exactly that."

A few tips on how to do it:
  1. Develop a routine (20 minutes a day, pick the time and days and stick to it).
  2. Snack smart with Healthy Snacks (try replacing high-calorie snacks with vitamin-packed veggies and apples).
  3. Be selective about the food you keep around you. Keep junk food out of the house, your office space, and car. Replace it with healthy items that are low calorie and packed with Vitamins.
  4. Find balance, enjoy yourself, and do exercise that you really like.
  5. Indulge - but do it in moderation. If you are craving a peanut butter sandwich, but you have sworn off white bread, sugar and fat. Then compromise and eat half of a sandwich. This will usually halt the craving and allow for your craving to be satisfied.
  6. Try new forms of exercise. Don't be afraid to try something new, and pick things that really interest you.
  7. Start small - pick a goal a determine the best way to reach it. Talk it over with someone you trust, a doctor, psychologist. Reach your goal, reevaluate and set another healthy goal. Before you know it, you will be at your ideal weight and body type.
